Ingredients:
Chicken Breast (bone-in) ½ a breast
Romaine Lettuce (ripped) 1 cup
Cucumber (chopped) ½ cup
Green Bell Pepper (chopped) ½ cup
Tomato (chopped) 1 medium
Carrot (shredded) ¼ cup
Extra Virgin Olive Oil, 1 tbsp
Lemon Juice, 1 tbsp
Salt
Black pepper
Method:
- 1. Prick the chicken with a fork. Marinate the chicken with the Olive Oil, lemon juice, salt and pepper. Allow about 20 minutes for the marinade to set in.
- 2. Bake the chicken in a pre-heated oven at 400C for 10 minutes or just until the meat is tender.
- 3. Layer your salad in individual serving plates, lettuce, cucumber, bell pepper, tomato, carrot, and chicken.
- 4. Serve with some cheese (feta or parmesan) and your choice of salad dressing. Enjoy!
